Classic Vanilla Pudding

Super simple and luscious vanilla pudding made with real ingredients!

Smooth and silky and a deep vanilla bean flavor without all the processed ingredients! My kids love this and I also use this in all my pudding desserts like dirt pudding or banana pudding. It’s so simple and delicious!

Boxed puddings often contain artificial flavors, dyes, and seed oils. As convenient as they are – for me and my family – it’s not worth it when making it from scratch is so easy. It only requires a bit of planning ahead. I’m at a place in life where I can gladly take the handoff of more preparation or a bit more elbow grease than constantly filling our bellies with highly processed and artificial ingredients. I know not everyone is there and everyone has different priorities but if you’re with me, you’ll love this recipe!

The ingredients are fairly simple!

Eggs, whole milk, sugar, salt, vanilla, butter, and a starch. I used corn starch here but using arrowroot powder or tapioca starch works as well, just be sure to use proper substitution protocols to ensure it thickens well.

No seed oils, dyes, or artificial flavors here!

  1. Combine your sugar, egg yolks, milk, starch, and salt in a heavy bottom sauce pot and set it on the stove on medium heat.
  2. Stirring constantly let the mixture heat until it’s bubbling. Once bubbling, cook for 2 more minutes stiring gently.
  3. Remove from heat and whisk in vanilla paste and butter.
  4. Optional: run the pudding through a sieve if needed to get rid of any lumps.
  5. Cover and let sit in the fridge until fully cooled.
  6. When ready to serve just stir it up to get it nice and smooth! Enjoy!

Homemade Vanilla Pudding

Prep Time 5 minutes
Cook Time 10 minutes
Servings 3 cups

Ingredients
  

  • 5 egg yolks
  • ¾ cup cane sugar
  • ½ tsp salt
  • 3 tsp vanilla paste
  • 5 cups whole milk
  • 6 tbsp corn starch a little over ¼ cup
  • 2 tbsp butter

Instructions
 

  • Combine egg yolks, sugar, milk, salt and corn starch into a heavy bottom sauce pot. Set on stove to medium heat.
  • Mixing constantly heat the mixture until it starts to bubble and thicken. Once bubbling, continue to cook for 2 minutes stirring constantly but not too vigorously.
  • Remove from the heat and stir in the butter and vanilla paste.
  • If you want a very silky smooth pudding – put it through a fine mesh sieve but it's optional!
  • Cover with plastic wrap and put in the refrigerator until completely cooled.
  • Enjoy!
