Tips for Making Toffee Bits
- Use a candy thermometer. The key to getting crisp toffee bits is to heat the butter, sugar, and salt to a minimum of 305 degrees. I take it a bit farther than that just to get a deep caramelized nutty flavory out of the sugar. I try to take it to 310-320.
- Line your sheet tray while the butter and sugar are melting together. You’ll want to be able to pull your mixture off the heat and get it onto a tray immediately so it helps to have this ready.
- You want to mix almost constantly but you don’t want to be too vigorous. Being too forceful when mixing can make the sugars and fat split. You can save it if this happens – just take it off the heat and add in a bit of cold water and really whisk it together. Repeat that until the split mixture becomes homogenous again.

Toffee Bits
Ingredients
- 1 stick unsalted butter ½ cup
- 1 cup brown sugar 200g
- 1 tsp salt
Instructions
- Add butter to a heavy bottom pot and heat on medium heat.
- When butter is halfway melted add in brown sugar and salt and let it melt together and come up to a simmer. Add in your candy thermometer.
- Line a baking sheet with parchment paper while butter and sugar are melting together.
- Stirring almost constantly, bring mixture up to 310℉ and immediately pour onto parchment lined baking sheet.
- Smooth out the mixture evenly with the back of a spatula.
- Let sit uncovered in a cool dry place for at least 20 minutes.
- Crack the hardened toffee with a spoon into desired sized pieces and store in airtight container.
