Preheat your oven to 350℉.
Melt together your butter, coconut oil, maple syrup, and honey on the stove or in the microwave. Add in your salt, cinnamon, and vanilla once melted.
While the butter/honey/maple syrup mixture is melting. In a large bowl add together all your oats, coconut chips, and nuts. Pour in the wet mixture and mix well.
Line a baking sheet with parchment paper and spread out the granola mixture into an even layer. If your tray isn't big enough, use two trays - you don't want to have too much on one tray or it will bake slowly and unevenly.
Bake at 350 for 15-25 minutes or until golden brown throughout. Mix the mixture 2-3 times while you bake it to get a nice even bake all throughout. On the last mix before you put it back into the oven, take a spatula and press down on the mixture. This will help create clumps.
Once nice and golden, take out and let it cool on the tray. Don't mix or break up the granola until it's completely cooled. Once cooled, break it up and store it in and airtight container for up to a week.
